Lemon Chicken and Artichoke

Another variation for the good-old plain chicken. Try out this Lemon Chicken and Artichoke for a refreshing taste and healthy, clean, high-protein meal.

Ingredients

  • 1 kg chicken breast
  • 1 tbsp olive oil
  • 6 cloves garlic
  • 1 tbsp oregano spice
  • black pepper to taste
  • salt to taste
  • cups water
  • 3 lemons
  • 2 cups boiled artichoke hearts
  • 1 tsp allspice
  • 3 dried bay leaves
  • cups chopped parsley

Instructions

  • Clean the artichoke hearts leaving only the clean, smooth parts.
  • Squeeze juice out of 1 lemon into a bowl of 3 cups water, add the artichoke hearts into the bowl and set to soak.

Artichoke Gravy

  • Squeeze juice out of the 2 remaining lemons.
  • Mix in a bowl the lemon juice, bay leaves, allspice, 1½ cups of water, salt and pepper.

Preparing the chicken

  • Salt and pepper the chicken breasts and then add the oregano.
  • Add the olive oil to a large pot and then the chicken, prepare until brown on both sides. Turn over when needed. Add the garlic cloves to the pot.
  • Add the artichokes (drained from water) and the gravy to the pot and mix.
  • Cover the pot and cook on low heat for 40 minutes. Stir from time to time.
  • Chop the parsley and add to the pot half the amount.
  • Turn the stove off, mix and add the remaining parsley leaves.
