Sweet Potato Patties

These patties are so tasty! Serve them with the sour cream dip and you’ll be hooked!

Ingredients

  • 1 kg sweet potato
  • 1.5 tbsp soy sauce (low sodium)
  • ¾ cups wheat flour (whole grain)
  • 0.5 tsp salt
  • ground black pepper to taste
  • 1 tbsp olive oil
  • 200 mil sour cream (low fat)
  • 2 tbsp chopped fresh chives
  • 1 clove minced garlic

Instructions

  • Peel the sweet potatoes. Bring a pot of water to a boil and add the sweet potatoes, cook until soft, filter and dry. Cool in the fridge for at least 30 minutes.
  • Preheat oven to 400° F (200° C)
  • Mash together with the soy, flour, salt and pepper. Mix until batter is smooth.
  • Line a baking tray with greased (the olive oil) parchment paper. Shape the mixture into patties, and place on the baking tray.
  • Bake for around 20 minutes or until golden. Don’t try and flip the patties before the time is up. Flip and bake on the other side for 15 minutes more or until golden.

Sour Cream Dip

  • Mix the sour cream with chives and garlic, add salt and pepper to taste.
