Sweet Potato Shepherd’s Pie

Ingredients

  • 1 kg ground lean beef
  • 2 potatoes
  • 4 sweet potatoes
  • 2 tsp olive oil
  • 4 diced white onions
  • 4 diced carrots
  • 4 cloves minced garlic
  • 2 tbsp sweet paprika
  • 1 tbsp turmeric
  • 1 tbsp cumin
  • 10 springs chopped parsley
  • ground black pepper to taste
  • salt to taste

Instructions

  • Preheat oven to 380 degrees Fahrenheit (190 celsius).
  • Cook potatoes and sweet potatoes until soft (about 20 minutes).
  • Simmer in 1 tsp of olive oil, the onions and the carrots until soft.
  • Add another 1 tsp of olive oil, then add the ground beef, minced garlic, paprika, turmeric, cumin, salt and pepper.
  • Mix ingredients and break up the ground beef into small pieces until color start to turn grey.
  • Add parsley and cook for an additional minute, set aside.
  • Crush the potatoes and sweet potatoes into a puree, add salt and pepper to taste.
  • Flatten the beef mixture on a baking dish and flat the puree mixture on top.
  • Bake for 35 minutes until puree becomes lightly golden in color.
  • Enjoy!
